Update for Julie! Key Lime Cupcakes

Key Lime Cupcakes
It was a last minute inspiration that had me making these to take to Rick and Lucys annual pool party. It was a totally rainy day is July and I wanted to bring a little ray of sunshine to the party. 
This is one of those times I cheated.  I used a white cake mix and exchanged one half cup of the water for one half cup of key lime juice.


 Then I made cream cheese frosting:

  • 8 ounces cream cheese softened
  • ¼ cup butter softened
  • 2 teaspoons vanilla
  • 1 box powdered sugar
  • cream the cream cheese and butter together well and then add the rest and whip.

  • I piped the frosting on top and then I got all crazy and candied lime slices and put them on top. To candy Limes, all you do is boil them in simple syrup for a few minutes and then roll them in sugar. Those little yellow balls are non-pariels.

  • Although the party was kinda rained out, no pool or badminton party, we made the best of it with a potluck under the carport and good company. My friends ate every single one of these really great cupcakes. I promised the recipe to Julie, so here it is!!!
